Raita and Tomato Rice

Method

  1. Beat Yogurt 2 cups and 1/4 cup water till smooth.
  2. Add 1/2 tsp salt, 1 tsp roasted jeera powder, 1/4 tsp red chili powder. Mix well.
  3. Add 1 cup of grated carrots and 1/2 cup of chopped tomatoes, 1/2 cucumber or white radish grated. Mix again.
  4. Add 1 cup of cooked potato mashed.

You can use all or any of the vegetables given above. and mix in with a light hand so as not to mush the potato gratings. Garnish with cilantro choppped, and sprinkle a little red chili powdwer and roasted jeera powder. Its very good. You can add fresh coconut too (optional).

Tomato Rice

Method

  1. Cook 1 cup rice with 1 tsp of oil and 1 tsp of salt and 1 1/2 cups water
  2. In a pan heat 2-3 Tsp oil, season with 1/4 tsp mustard, chanadal and urad dal 1 tsp each
  3. When light brown add peanuts (optional), curry leaves hing. (now you can add 1 diced capsicum) (it becomes tomato and capsicum rice)
  4. Add chopped tomatoes (2 medium), 1/4 tsp haldi and 3 tbsp sambar powder and cook till done about 3 mins.
  5. Add salt 1/4 tsp and mix in rice turn off the heat.
  6. Garnish with grated coriander leaves and lemon slices and onion rings.
