Hi ! My name is Roopa Vernekar. I am from Michigan. Here's a tasty recipe for Soya Bean Kadhi. Soya beans are very nutritious as it is rich in isoflavones which slows down our Ageing process. Since soya beans are rich in protiens, it absorbs a considerable Amount of calcium that you have consumed from the blood stream. Soya Bean Kadhi

Ingredients

Soya Beans - 1/2 cup,
Cooking Oil - 1 tblsp,
Mustard Seeds - 1 tsp,
Cumin Seeds (Jeera ) - 1/4 tsp,
Green chilliess - 2,
Cilantro (coriander leaves) - 4 to 5 sprigs,
Red Chillies - 2 (or as per your requirement),
Grated ginger - 1 tsp,
Asafoetida or Hing - 1 pinch,
Turmeric (Haldi) - 1/2 tsp,
Lemon juice - 2-4 tsp,
Salt to taste.

Method:

  1. Soak Soya Beans Overnight. Pressure Cook Soyabeans with some salt until tender.
  2. When cool, blend the beans with green chillies in a mixie until smooth.
  3. In a kadai, heat oil, add mustard and jeera. When the mustard splutters, add haldi, ginger, broken pieces of red chillies and hing and fry over medium heat.
  4. Add the blended mixture of the beans into the kadai and cook for 2 mins.
  5. Add Lemon juice, salt and Chopped Coriander Leaves and enjoy. Can be served with plain rice Or chappatis.
