Hi,
I am Priya Menezes. I manage my own automobile workshop in Mumbai. This is my second contribution to Bawarchi. I find your site very useful and make it a point to log on to it atleast 3 - 4 times a week and specially when I am expecting guests. Do write me your comments regarding this raita.

Pineapple Raita

Ingredients

1 cup finely chopped Pineapple
2 cups fresh Curds
2 tbsps of Milk
2 tbsps Sugar
1/2 cup Fresh Cream
A dash of Pepper
Salt

Method:

  1. Hang the curds for around 1/2 hour till the water drains off.
  2. Take the hung curd in a bowl and beat well till it is even.
  3. Add the milk, sugar, salt, pepper and fresh cream. Put in the refrigerator.
  4. Add the pineapple in the curds just before serving.

P.S: Do not put the pineapple together with the curd or else the raita will turn bitter.
