Mutton (Goat Meat) Biryani

Ingredients

2lb Goat meat
Basmati Rice 3 cups
Onion 2 medium size
Kewda water 4 -5 drops
Ginger 2"
Cinnamon Stick 2 1/2 "
Garlic 4 -5 cloves
Saffron 1 pinch
Tomato 1 medium size
Salt to taste
Green Chilli 4 -5
Ghee 3 tbsp
Lemon Juice 1 tsp
Card or Yogurt 2 tbsp
Turmeric powder 1 tsp
Coriander powder 1/2 tsp
Red Chilli powder 1 tsp
Oil 2 tbsp (I prefer Canola oil)
Garam Masala Powder 1/2 tsp
1 boiled Egg (sliced )
Salt to taste

Method:

  1. Cut the mutton into medium pieces and keep it aside.
  2. Take onion, ginger, garlic, green chilli, tomato and blend to a paste.
  3. Marinate the mutton for two hours with the above paste, lemon juice, card and the rest of the powders.
  4. Put the rice in the rice cooker, add 5-6 cup water and all the ingredients for rice except ghee and set it to cook.
  5. Now take a heavy bottom pan pour the oil, heat it, then place the marinated mutton in the oil. Cook it in the medium heat for 7-10 minutes, then add the salt and cook for another 15 minutes or till it is tender. Do not add any water. There should not be any gravy left in the mutton.
  6. Now spread the cooked rice in a dish and left it for half an hour.
  7. Take another heavy bottom pan pour the ghee, heat it and make the oven low, then add the rice slowly and carefully. Rice grain should not break.
  8. Take the serving pan pour a layer of rice then pour a layer of mutton and then another layer of rice , finish the layer with rice.
  9. For garnish sprinkle raw onion (sliced) and boiled egg over the top.
  10. Serve hot with Raita or / and Salad.
