Chicken Fry

Ingredients

Chicken : 1 Kg.
Red Chilly Powder : 2 tablespoon - roast well
Coriander Powder : 2 tablespoon - roast well
Turmeric : 1/2 teaspoon
Ginger : Big piece crushed
Green Chilly : 3 nos. crushed
Small Onions : Large quantity
Coconut : chopped into small pieces
Curry leaves : Small bunch
Salt : to taste
Coconut Oil : Required Qty.

Method:

  1. In chicken pieces (raw) smear well roasted coriander & chilly powders, crushed ginger & green chilly, coconut pieces, curry leaves, turmeric, salt to taste & coconut oil & keep it closed for sometime, approximately 4-5 hours.
  2. Heat coconut oil & first fry curry leaves & finely chopped small onions till the onions turn golden brown. To this add the chicken pieces & simmer in low fire stirring occasionally for 3-4 minutes.
  3. Then add only half a glass of water & keep the lid closed, till chicken gets cooked. Finally remove the lid & dissolve the gravy & simmer in low flame for approximately 15-20 minutes stirring occasionally till chicken gets roasted & the colour changes to dark brown. Serve hot.
