Hi,
I am Vaijayanti Tamhankar from Adelaide, Australia. Here's a baked recipe that is easy to prepare and tastes yum. It is ideal for a weekend brunch and goes equally well with soup and crackers for a light dinner.

Layered Potato Surprise

Ingredients

4 Tiny Potatoes
1 Capsicum finely chopped
1 small Onion finely chopped
1/2 cup of shredded Mozzarella Cheese
6 tbsps of Tomato Sauce
2 tbsps of finely chopped fresh Mint leaves
1 tbsp of black ground Pepper

Method

  1. Wash and cook the potatoes in the Microwave till they lose their rawness (not very soft and not very hard). When they are done, peel them and chop them into thin round slices.
  2. In a pan, heat some oil and fry the onion and capsicum till tender (Make sure that the onions do not get brown or burnt, the onion should just turn transculent).
  3. Take a baking dish and line it with Aluminum foil.
  4. Arrange the round potato slices and sprinkle the mint leaves over these potato pieces.Spread the fried onion-capsicum over this.
  5. Add the mozzarella cheese over the onions. Top with Tomato sauce and ground pepper. For a spicier variation try Tomato chilli sauce.
  6. Preheat the oven to about 280o F for about 10 mins.
  7. Bake the dish on about 280-300o F till the cheese melts and binds/spreads over the other layers. Baking will roughly take about 35-40 minutes.
  8. Serve hot with French Onion Soup or Spring Vegetable Soup.
