Paalak-Tofu Curry
Ingredients
Spinach 1 lbs
Tofu 1 pocket
Onion 1 medium size
Tomato 1 medium size
Red Chilli powder to taste
Turmeric 1 pinch
Salt to taste
Cumin seeds 1 pinch
Garlic 2 flakes(optional)
Ginger 1 small piece (optional)
Oil 2 tbsp
Method:
- Wash the Spinach thoroughly and add garlic and ginger then let it boil
for 5-8 mts or until its soft.
- Cool it and then grind to a fine paste alongwith the tomato.
- Heat oil in a pan and add cumin seeds, when its done, quickly add
lengthwise chopped onions , fry them until it turns golden brown.
- Add little turmeric powder , chilli powder and salt and then add the
spinach-tomato paste. add little water to give it a curry consistency. Let
it cook for sometime.
- cut Tofu into small square pieces and finally add to the above prepared
curry. let it simmer for a while and enjoy the taste.....u can decorate it
with coriander or mint leaves if u wish.....
