Sukto (Bengali Dish)

Ingredients

Karela - 1-1/2 cup
Brinjal -1/2 cup
Potato - 1/2 cup
Pumpkin - 1/2 cup
Raw Papaya - 1/2cup
Raw Banana - 1/2cup
Cucumber - 1/2cup
Drumstick - 1/2 cup
(all this veg. should be pieces in diced shape)

Urad dal bari - 1 cup
Radhuni a spice from Bengal - 2 tsp (you can use mustard seed if radhuni is not available)
Ginger-Jeera paste - 2 tsp
Tejpatta - 2 no
Salt - as taste
Turmeric powder - 2 tsp
Water - 1 cup
Sugar - 2 tsp.

Method:

  1. To make bari, soak the urad dal for 6 hrs. and then make a paste and add salt.
  2. Now greese a steel plate with oil and put the baris on it. Dry it in sunshine, and stored it.
  3. Heat a pan add oil. Add radhini and tejpatta. After it turns brown add ginger jeera paste and fry for a while. Add all the veg. and fry with its masala, also you add salt and turmeric powder. After frying it add water and turned to boil.
  4. Now add baris and covered for 10 minutes in a slow flame. Now add sugar and mix with sabzi and serve hot with rice.
