Hello,
I am Pragnya Sudhir Merchant. I live in Baroda, India. I like to prepare quick wholesome salads and raitas which can be substituted for a meal. This raita goes well in Parties too. Hope you all enjoy it.

Wholesome Rajma Raita

Ingredients

1 1/2 cup Curd (not sour)
I cup boiled Rajma
1 tbs Sprouted Moong (not very soft...put them in boiling water for about 5 mins)
1 each Cucumber, Carrot, Tomato cut into small cubes
1/2 cup Green Onions
2-4 Green Chillies finely cut
Salt and Pepper to taste
1 tbsp Mayonnaise (optional)

Method:

  1. Whip the curd. Add salt, pepper, green chilllies, pinch of sugar.
  2. Add Mayonnaise (optional)
  3. Add all other ingredients, garnish with coriander.
  4. Put it in the Fridge to cool.

Serves 6 people. Goes well with Parathas, Rice, or even ....Gujarati Khichdi!!!
