Bengali Pulao

Ingredients

1. 500 gms Rice
2. 2 Bay Leaves
3. 30 gms. Raisins
4. 12-14 Cashewnuts
5. 6 Cloves
6. 6 Cardamoms
7. 1" piece Cinnamon
8. 1 Onion, sliced
9. 1 tsp. Ginger paste
10. 1/2 tsp. Sugar
11. Salt to taste
12. 4 cups Hot Water
13. Saffron soaked in a tbsp. of milk
14. 200 gms. Oil

Method:

  1. Clean, wash and drain rice.
  2. Heat oil in a heavy bottomed vessel. Add bay leaves and onion slices. Fry till golden brown. Add cloves, cinnamon, cardamom, cashews and ginger paste. Fry till light brown. Add rice, salt and sugar. Stir fry for a few minutes.
  3. Add raisins and saffron-milk mixture and mix.
  4. Add 4 cups of hot water and continue to mix. Cover and cook till rice is done.
  5. Garnish with nuts and fried onions.
