I am Tharunya. Check out this recipe for Brussels Sprouts Curry. Brussels Sprouts are a rich source of Vitamin A. It also contains a good lot of Vitamin C and Iron. Brussels Sprouts Curry

Ingredients

Brussels Sprouts 1 pkt (10-15 sprouts)
Turmeric Powder a pinch
Garam Masala (powder) 1 tsp
Coconut Milk 1/2 cup
Salt to taste
Curry leaves a hand full
Coriander leaves a hand full

To be ground to a paste:

Ginger 1 inch piece
Garlic 2-3 pods
Small Onions 5
Tomato 1 small
Coriander Powder 2 tsp
Chilly Powder 1 1/2 tsp
Pepper Powder a pinch
Fenugreek (methi) 1 tsp
Cummin (jeera) 1 tsp

Method:

  1. Clean and cut sprouts into halves. (Check carefully for tiny worms). Soa k in lukewarm water with a little salt for 10 minutes. Rinse them well.
  2. Boil sprouts in very little water with a little salt and turmeric for 5 min utes.
  3. In a heavy bottomed pan, fry the ground paste in a little oil, till the raw small goes. Add cooked sprouts and stir gently. Add very little water and bring to a boil. Add garam masala.
  4. Reduce heat and add coconut milk, stirring the sauce continuously. Heat for a couple of minutes on low flame. Season with chopped coriander.
  5. Serve hot with Rice/Rotis.
