Suran (Yam) Masala Curry

Ingredients

A can of Suran (Yam)
Tamarind paste (or fresh)
Salt to taste
1 tbsp. Garam masala
3 Tomatoes (finely chopped)
1 large Onion (chopped)
2 tbsp. Cooking Oil
3 Garlic cloves (chopped)
1/2 tbsp Ginger paste
2 tbsp Curd

Method:

  1. Boil Suran (yam) in tamarind added water. Important: Do not boil too much, just enough for the suran to be semi hard.
  2. Fry or saute them in about two tbsp oil. Take them out before they start turning any more brown.
  3. In a heavy-bottom pan, add the oil, finely chopped onions, ginger, garlic, finely chopped tomatoes and fry till the oil leaves the sides of the pan.
  4. Add the suran pieces to this masala and add 2 tbsp of curd (make it 1 tbsp if you want it less sour).
  5. Cook and Stir for about 5 minutes, then serve hot.

Amazing dish and an auspicious one for North Indians during Diwali! Goes well with hot Pooris or Parathas.
