Hi,

Chayote Squash Curry

Ingredients

Chayote squash 2 (cut into small pieces)
Onions 1 medium (chopped into small pieces)
Tomato 1 medium ( instead of tomato you can also use tomato puree 3 or 4 spoons)
Potato 1 medium (peeled & cut into cubes)
Green Chillies 1 or 2 (cut very small)
Curry leaves few
Ginger Garlic paste 1 tsp
Turmeric 1/2 tsp
Salt according to taste
Chilli powder 1 tsp
Dhania Jeera powder 1 tsp
Coconut powder 1 tbsp
Coriander

For Seasoning:

Chana dal 1 tsp
Urad dal 1 tsp
Mustard seeds (rai) 1 tsp
Cumin seeds (jeera) 1 tsp
Red chilly 1 no
Oil 4,5 tbsp

Method:

  1. Take a thick pan & heat the oil. Put all the ingredients for seasoning one by one starting with dals & seeds after that. When mustard seeds splutter put curry leaves, onions & green chillies. Please take care not to burn the seasoning.
  2. Fry onions for few mins. Put ginger garlic paste. When onions turn brown put tomatoes cut into small pieces or tomato puree. When tomotoes fry well put potato cubes. Fry for 1 or 2 min & put lid for sometime. When pototoes are cooked put choyote squash & cover.
  3. Put all powders & Cook until done. Put coconut powder before switching off gas. Sprinkle fresh coriander on the top for decoration.
  4. Serve with rotis or hot rice.
