Chicken Curry (Burmese style)

Ingredients

2 Kg Chicken -- cleaned and jointed
2 large Onion, sliced
Curry Leaves
1 tbsp Ginger-Garlic paste
3 tbsp Cooking Oil

Method:

  1. In pressure cooker, put 3 tbsp cooking oil and heat.
  2. Fry two large sliced onions and a few curry leaves till golden, then add 1 tbsp ginger garlic paste and and fry well.
  3. Add a mix of the following masalas --- 2 tbsp dhaniya powder, 1 1/2 tbsp jeera powder, 1/2 tbsp haldi powder, 3/4 tbsp chilli powder [Kashmiri is good because it gives colour and is not too hot]. Fry this quickly but see that the powders don't burn.
  4. Put in the chicken pieces and mix well with the masala and fry for a few minutes. Add two potatoes cut in quarters and mix all together.
  5. Add 1/2 cup tomato puree and 1/2 cup water. Pressure cook for about 8 minutes. Cool cooker.
  6. Before serving, add one tetrapack of coconut milk and simmer. Add juice of 1 lemon.
  7. Serve hot with white basmati rice or over noodles.

Serves about 6 people.
