I am Prabha Joshi likes to share a very tasty and easy recipe of Brinjal in Curd.

Ingredients

Small Brinjals 100 gms
Curd 200 gms
Garlic cloves 3 -4
Red Chilli powder 1/2 tsp
Salt to taste
Oil 1 tbsp

Method:

  1. Wash brinjals and slit them vertically. Please take care not to break the stems.
  2. Hang the curd to remove excessive water.
  3. Crush the garlic cloves. Add salt, chilli powder and crushed garlic to the curd. Keep aside.
  4. Heat oil in a wok and put the brinjals and let them cook in oil until they turn soft. Add chilli powder and salt. Let them get cooled.
  5. Arrange the brinjals in a shallow dish and pour the curd on brinjals, taking care that all the brinjals are coated wih curd.
