Okra Gravy

Ingredients

1.Okra - 13 or 15 okras in Nos.
2.Onion - 1/2.
3.Tomato - 1 big.
4.Red Chilly powder- 3 spoon.
5.Turmeric Powder - A pinch.
6.Cloves - 5 or 6 nos.
7.Ginger Garlic paste - 2 tsp.
8.Garlic flake - 3 (cut into small pieces).
9.Oil - As required (4 tsp).
10.Salt - As required to taste.
11.Mustard seeds -1 tsp.
12.Curry leaves - 4 or 5 leaves.

Method:

  1. Wash the okras and split it on table with paper as the base, such that the present waters are dried.
  2. In a deep pan or kadai, pour 2 tasp of oil and fry these okras, keep frying for 5 min, then keep it in a separate plate.
  3. In the same pan or kadai, pour some more oil as required for you, when it gets heated split some mustard seeds and curry leaves, then add garlic flakes, fry for a while and then add cloves, then add onion and keep on frying till the onion reaches nice brown in colour.
  4. Add Ginger & garlic paste to this onion, fry well till the paste mixes well with the onion, then add tomatoes (finely cut), Red chilly powder and turmeric powder, fry well for 2 min.
  5. Immediately add okras (already fried and kept) to this and fry, now add required amount of salt and the cover the pan with the lid, (Note: do not add a little bit of water to this mixture). For every 3 min, take out the lid and fry the okras, let it cook for 10 min -Until okras reaches brown in colour. Now your "OKRA GRAVY" is ready to serve, serve with the coriander leaves on it.

**OKRA GRAVY- goes well with white Basmati Fried Ghee rice, Ordinary white rice, Chapathi, Puri, Naans, Veg. Pulav, Curd Rice, Lemon rice.**

***White Basmati Fried Ghee Rice is simple to prepare, cook the basmati rice as usual in the rice cooker and fry it in the ghee by adding some cooked peas to it.
