Though I love to cook, I do not like to spend too much time in the kitchen. So, I look for easy recipes, most of them self-made, to save time and at the same time, make it tasty enough for the others to be enthusiastic about my innovation in cooking. This is one of my innovations, which is a hit amongst everybody, the elders as well as the youngsters.

Easy Vegetable Curry

Ingredients

Cauliflower - 1/4 kg. (cut to big flowerlets)
Capsicum - 3 medium sized (cut into 1/8ths)
Potato - 2 medium-sized(cut into small cubes)
Onion - 1 medium sized(chopped finely)
Tur dal - 1 tbsp
Grated coconut - 2 tbsps
Ginger - 1/2 inch piece
Green chillies - 4
Oil - 1 tbsp
Coriander leaves - finely chopped

Method

  1. Fry the onions in oil till it changes colour.
  2. Boil all the chopped vegetables and the fried onions in 2 glasses of water.
  3. When the vegetables are almost done, add salt.
  4. Grind tur dal, coconut, ginger and green chillies with a little water and add to the boiled vegetables.
  5. Cook in low flame for 7 minutes, stirring from time to time.
  6. Garnish with chopped coriander leaves.

Serve hot with chapatis, puris or rice
