My name is Anu&Ihave been living in U.S for the past 7yrs.This is one of my mom's recipes. Even though I am a frequent visitor to Bawarchi,this is my first recipe-contribution. Hope you enjoy it.

Cilantro Kootu

Ingredients

1 big or 2 small bunches of cilantro(coriander leaves)
2 medium sized egg-plants(kathirikkai)
2 medium sized potatoes
9 to 10 shallots(kutti vengayam)
half cup toovar dhal
3 red chilies
1 tablespoon dhania seeds
1 tablespoon channa dhal(kadalai paruppu)
quarter cup grated coconut

Method:

  1. Roast the last 4 ingredients in 1 teaspoon oil & grind to a fine paste.
  2. Boil toovar dhal in a pressure cooker or microwave till it is soft.
  3. Chop the potatoes,eggplants and shallots into medium sized pieces.
  4. De-stalk,clean and coarsely chop the cilantro leaves.(Do not chop them very finely).
  5. Boil all the veggies in a cup of water with little turmeric till they are cooked.
  6. Now add the boiled toovar dhal, ground coconut paste and salt to the veggies and keep on flame for 2 more minutes.
  7. Season with mustard splattered in oil and curry leaves.
  8. Your kootu is ready to eat. You can serve this kootu with rice and pappad. It even tastes great with chapathis.
