Parathas

Ingredients

1/4 cup rice flour
1/4 cup wheat flour
1 tablespoon semolina (sujji)
1 tablespoon moon dal or urad dal (soaked)
2 tablespoon spinach chopped
1 tablespoon paneer (cottage cheese)
1 flake garlic
2 spring onion stem finely chopped
salt to taste
water for making dough
oil for shallow frying.

Method

  1. Soak the dal for 2-3 hours and then gring it into a paste and keep aside.
  2. Grind the spinach ,garlic and onion to a paste, adding chillies if desired.
  3. Mix the pastes and all the rest of the ingredients except oil and make a dough.
  4. Let this dough rest for 15-20 minutes and now take a small portion and roll it.
  5. Heat the griddle on high flame.
  6. Brush a little oil on the rolled paratha and close it from all the sides and again roll it till the size of a small plate.
  7. When the griddle is hot put the paratha on it and shallow fry till both the sides are golden in colour.
  8. Serve hot with ketchup, chutney or jam.

Recipe secret: You can also add vegetables like carrot, beans, peas and shredded cabbage to this at step 2. Vegetables should be minced very fine. Left over dals can also be used in these parathas.
