Hi!
I am Parul Jain Shukla from St.Louis USA. This is my third recipe on one of the very good sites - bawarchi. I am very fond of cooking and the whole attribute goes to my mother who herself is an excellent cook. The recipe I am going to share here is very easy to cook and very tasty and goes very well with plain boiled rice or chapatti. My husband just loves it. The recipe is called CORN CURRY.

Corn Curry

Ingredients

1 can Corn Kernels
1 big Onion
Oil-1 Tablespoon
Tomato puree-1 cup
Salt- According to taste
Red Pepper-1/4 teaspoon
Coriander Powder-1/4 teaspoon
Haldi or turmeric - A little bit
Garam Masala for flavor
1/2 cup Water
Cilantro or coriander and green chillies to garnish

Method:

  1. Heat the oil and Chop the onions.
  2. Fry the onions till they are golden brown.
  3. Put in tomato puree and all the masala (red pepper, coriander powder, salt etc) except for garam masala.
  4. Let the masala simmer and when oil start to come up add corn.
  5. Put in little water and let it come to a boil.
  6. Lower the heat/gas and let the corn be cooked (till corn kernels get soft)
  7. Garnish with garam masala, green chillies and coriander and serve hot with rice or paranthas.
