Quick Pumpkin Curry

Ingredients

(Serves 2)
Pumpkin - chopped into small pieces - 1.5 lbs or 1
soup bowl full.
Onion - chopped finely - 4 table spoons
Green chillies - chopped finely - 3 nos.
Mustard -1/2 spoon
Oil - 3 teaspoons
Turmeric powder - a bit
Milk - 3 tablespoons
Tamarind paste - 1/4 spoon.
curry leaves - a little
coriander leaves - chopped finely
chilli powder - a little (optional)

Method:

  1. Heat oil in a pan. Add mustard.Once it splutters, add green chillies,curry leaves & turmeric.
  2. Add onions.Fry well.
  3. Once onions are well fried, add pumpkin pieces,salt & add the tamarind water prepared to it.
  4. Cook pumpkins well in it.
  5. After it is cooked well, add the milk.(alter the quantity of milk depending on how thick you want the curry to be). keep in medium heat for about 7 - 8 min.
  6. Garnish with chopped coriander.

Serve with rice or rotis.
Can be made with the chow-chow(chayote squash),snake gourd,ridge gourd(peerthankai) or even tomatoes.
