I'm Manjari Pandey (from Karnataka, India) living in Toronto with my husband Shiv and 9 year old son Bharath. Here is a recipe for Quick Badam burfi which I would like to share with Bawarchi fans.

Quick Badam Burfi

Ingredients

1.. 1-1/2 cup Badam (almond) powder
2.. 3/4 cup fine rava
3.. 1/2 cup desiccated coconut (finely powdered)
4.. 2 cup sugar
5.. 1 cup milk
6.. 2 tbs butter
7.. 1/2 tsp cardamom powder

Method:

  1. Mix all the ingredients from 1 to 5 in a heavy bottomed pan. Keep it on stove and keep stirring.
  2. When it begins to thicken add butter a little at a time. Add cardamom powder and keep stirring until it begins to look like a soft mass.
  3. Turn off the heat and roll the mass on a greased board with a greased rolling pin (until desired thickness is achieved)
  4. Cut them into diamond shapes.
