Butternut Squash Curry

Ingredients

Butter nut Squash: 1 or 2
Coconut : 1 cup
Curd : 1/2 cup
Red chillies : 5
Veppilla : 6
mustard : 2 tsp
green chillies : 4
ginger : 2 tsp
oil : 3 tbsp
small onion(scallops) : 5 in number

Method :

  1. Peel the outer skin of Butter nut Squash and wash it thoroughly in clean water.
  2. Take some scallops, green chillies, ginger and make into a coarse paste.
  3. Rub the paste in the Butter nut squash and pour 1 cup of water.
  4. Heat this until cooked.
  5. Then grind the coconut with curd and add to the cooked Squash.
  6. Heat it in low flame until thick.
  7. Pour oil in a pan.
  8. Add mustard and allow it to splutter.
  9. Then add dried chillies and Vepilla.
  10. Pour this to the cooked Squash and ur Butter nut Squash is ready to be served with hot rice and pickle.
