Hi, I am Lalita BrahmaNandam and I live in Mtn. View, California. Here is the recipe for stuffed Brinjal curry which is easy to make and tastes good with rotis or with white plain rice and ghee. I like to try new recipes and cooking is one of my interests.

Stuffed Brinjal Curry

Ingredients

Brinjals 8 ( medium size , round ones - preferred )
Green Chillies ( medium hot ) 6
Coriander ( cillanthro ) 2 bunches
Oil ( small cup )
Salt to taste
tamarind paste ( 1/4 tbl.spoon )

Method

  1. Make a paste of green chillies and coriander leaves. Add salt to this and mix well.
  2. Cut brinjals into 4 pieces vertically such that the pieces hold together at one end.
  3. Stuff sufficient green chilly and coriander paste into the brinjals.
  4. Heat oil in a thick bottom pan and fry the brinjals. Add tamarind paste after the brinjals are fried for few minutes. Stir the brinjals till they are fried on all sides.
  5. Tastes good with rotis or with white rice and ghee.
