Hi!! I am Pradnya Jog from Cincinnati, USA. I work in a software company. This is my favourite site. I would like to contribute a very easy and tasty recipe which can be prepared within no time!! This is my husband's favourite dish.

Chinese Fried Rice

Ingredients

Long grain rice 2 cups
Spring Onions 2 bunches
Capsicum / Green Pepper 1/2
Fresh Peas 1/2 cup
Chicken (optional)
Eggs 2 (optional)
Soy Sauce
Chilli Sauce
Black pepper powder 1tsp.
Refined oil 2tbsp.
Water 4 cups
Salt to taste

Method:

  1. Wash rice, add water and keep it on a high flame.After about 7 mins (when water is not seen) lower the flame to low, cover the vessel with the lid and let the rice cook for 5 more mins.
  2. Wash the vegetables. Cut capsicum lengthwise. (If you are using chicken pressure cook it, cut into thin strips or else get the ready to use chicken chunks.)
  3. Once rice is cooked remove it from the vessel and spread it on a dish so that each grain remains separate.
  4. In a wok or frying pan take oil, heat it and add all the vegetables and fry well till slightly soft. (If you are going to use eggs this is the time to add eggs. Lower down the flame and add eggs and mix well with vegetables).
  5. Add salt, pepper powder, rice, soy sauce and chilli sauce. Mix well.
  6. Just before serving on medium high flame stir the fried rice till nice aroma sets in and till you feel that rice is fried properly.

Your delicious fried rice is ready!!
