  1. Baking, though a very tasty and convenient form of cooking is still not a favourite of many a cooks. Though most of us love the baked goodies, be them cookies, cakes or casserole dishes like pasta, vegetables, etc. , we are not ready to experiment with these as readily as other forms of cooking.
  2. However, once the initial hesitation of experiment with the oven is overcome, I'm sure it will become your favourite form of cooking.
  3. Baked courses can be prepared well in advance and baked only at the last , just before it is required.
  4. All the tedious part and time consuming steps can be completed well before your guests arrive.
  5. A heavy baked dish can form the main course of your dinner around which the other items can be planned which are lighter and easy to make.

    Mealsnacks : Vegetable chunks in tomato gravy, vegetable pie
    You may find many more baked dishes to interest you as you go through the various categories of the cookbook.
  7. The basic most used gravies used in baked dishes especially for vegetables are either white sauce, described in the italian dishes menu, or tomato gravy as described in mealsnacks, or a cheese gravy as given in the mexican nachos dish. These gravies can be used in many different combinations of vegetables and pasta, using your likes and favourites to the most.
  8. Another big advantage is that for those short of time most of the gravies can be made in large quantity and frozen to be used later as desired. This saves a lot of time and work when you are working or doubling up with your time schedules.
  9. Simple garnishes liven up the casseroles to a great extent and make them more mouthwatering. You may use tomato, cucumber curls, or rinds of lemon & orange, or pipe mashed seasoned tomato on top and rebake just before serving, just let you imagination run ....wild!!!
