Carrots supply the beta carotene requirements of the body acting as an antioxidant, along with generous amounts of vitamin A, required for good eyesight and skin.

Carrot supplies the fiber requirements if chewed on raw, which acts as roughage for the bowels. So the uses of carrots are multiple, and the beauty they add to a dish with their colour is not  the least of them.
