Filling Summer Chillers
  1. Come summer and all we can see is red. Unless cool chilling sips and slops are are to cool us down!!!
  2. Even the thought of hot ovens, standing in front of cooking stoves, gives us the creeps, and sets the sweat glands working overtime.
  3. We have covered a fairly long list of cooler and quenchers to beat the summer heat. However, if the dish can fill up the tummy, at the same time, nothing like it.
  4. Any cooking required to be done in the dish can be done very early in the day, (while the day temperatures and you are still cool) and stored in the fridge till required.
  5. Where fruit esp. citrus varieties are used, leave seasoning to the last few minutes of serving.
  6. When fruit and milk are mixed, check to see that fruit are NOT SOUR. Or you may land up curdling and wasting the whole preparation and hard work.
  7. If fruit which is sour must be added, boil it first in sugar water. Cool. Drain and then add, that too, just a few minutes before serving.
  8. If the fruit is soft, like oranges, strawberries, etc., sprinkle powdered sugar, and leave aside till serving time. Add just before serving the dish. Examples of such fruit are pineapple, oranges, limes, etc.
  9. A light topping cream can be prepared in the following way:
    Take 1/2 cup fresh homemade soft paneer chilled, 2 tbsp. cold milk.
    Blend both in a small mixie till smooth and light.
    Add powdered sugar and beat with a fork till well blended.
    Add dollops as topping or pipe with a cream nozzle.
    Keep chilled.
