Chutneys
Malak Pudi
Ingredients:
1 cup bengalgram dal
1 cup urad dal skinned
1 tsp. cumin seeds
2 stalks curry leaves
6 dry red chillies
1/2 tsp. chilli powder (if required)
1/2 tsp. asafoetida
1/4 tsp. sugar
1 tsp. salt (or to taste)

Method:

  1. Dry roast gram dal in a heavy pan on low flame, till light golden.
  2. Remove in a plate, keep aside.
  3. Repeat similarly for urad dal too.
  4. Just before removing from pan, add cumin.
  5. Add also curry leaves, asafoetida, chillies.
  6. Add to roasted gram dal, cool mixture.
  7. Grind to a powder, adding chilli powder, salt sugar
  8. Use similar to andhra pudi.

Making time: 20 minutes
Makes: 2-1/2 cups
Shelflife: 6 months
