Dips and Dressings
Gingerly Dressing
Ingredients:
2" piece fresh ginger
1 lemon juice extracted
1 tsp. vinegar
1 tsp. sugar ground
1/4 tsp. cumin seed powder
1/4 tsp. black pepper freshly ground
1 small green chilli finely chopped (optional)
1 tbsp. olive oil
salt to taste

Method:

  1. Crush ginger with a mallet, place inside a muslin cloth.
  2. Wet cloth, holding ginger like inside a pouch.
  3. Squeeze juice out as much as possible, saving it in a container.
  4. Discard residue.
  5. Put all ingredients of dressing, and ginger juice into a bottle.
  6. Shake well to blend, keep in refrigerator till required.
  7. Serve the dressing on salads

Making Time : 10 minutes
Makes : 1/2 cup
