INGREDIENTS1 cup fresh ripe strawberries
1 cup fresh cream
2 tbsp. castor sugar
METHOD:
- Wash, drain, destalk strawberries.
- Cut into for vertical sections, save 2 whole.
- If strawberries a sour, sprinkle a tsp. of castor sugar over them.
- Beat freshcream in a chilled bowl over a bowl of icecubes.
- Beat till it thickens to coat the spatula thickly.
- Add sugar, beat again till soft peaks form.
- Put a dollop of cream in a chilled glass.
- Add some strawberries, repeat with cream and strawberries.
- Make a swirl on top with large star nozzle with cream if desired.
- Slice whole strawberry till the base into 3-4 sections, but do not cut.
- Press like a fan, place on top of swirl.
- Serve fresh and chilled.
