Tips
  1. India like other countries, has its share of fried munchies that are labelled no doubt as 'junk food', but have no alternatives to replace their crunchy, munchy, tangy, sweetspicy deliciousness.
  2. Though they cannot boast of high nutritional value they do provide some of the most tasty dishes which can be produced to guests in a jiffy, if prepared ahead (weeks ahead!) and stored. Sev forms an important ingredient of many chaats and snacks all over the country. Similarly chivdas form tasty crunchy snacks that need to be just poured onto a plate and served if prepared much ahead.
  3. They go great with teas, cocktails, and cold drinks alike.
  4. The best way to preserve them is to store them in clean airtight glass jars, with screwtop lids. Plastic and unbreakable containers, though airtight tend to affect the flavour after 5-6 days. Another good way to store them is to line containers(plastic or steel) with foil and pour into the foil. Make sure the lid is quite tight.
  5. Take care not to handle them with even slightly moist hands or spoons. Or all the preparation may turn soggy.
  6. Make many varieties when you get around to making them, since the same oil can be used to frying most of them.
