Introduction Khandeshi DishesA cluster of townships that lie at the southern side of the satpura hills, north of the province of maharashtra, fondly call themselves the people of khandesh. It is not a geographical division, but a division made by their distinct cuisine, which is unique in itself.
The flavours are enhanced by the flavours of the earth, rather than the addition of artificial colours, and flavours, which have become so pronounced in the present day cookery.
Though the availability of traditional modes of cookery may force one to resort to ovens, stovetops, and the like; these foods are cooked in earthen and iron utensils, and the use of coals is made to roast, to bake, and to provide the cooking medium.
A substitute mode of cooking has been mentioned wherever possible, however, there will be a definite change of flavour, when using advanced modes of cooking.
