Delicious Kheer
Lychee Kheer
Ingredients:
1 cup chopped lychee
2 tbsp rice
1/2 tsp. cardamom powder
few drops of kewra essence
1 litre milk
1/2 cup sugar
5 pistachios crushed coarsely
10 almonds crushed coarsely

Method:

  1. Coarsely grind the rice
  2. Wash and soak for 30 minutes
  3. Heat milk, bring to a boil
  4. Add rice, stirring continuously, till boiling resumes
  5. Simmer, stirring occasionally, to keep rice from sticking to bottom
  6. Allow rice to cook fully
  7. Add lychee and stir for 5 mins.
  8. Add sugar, cardamom, essence, almonds and pistachios
  9. Stir, simmer for 2 minutes
  10. Serve chilled
