Milk Dishes
Rice Kheer
Ingredients:

1 litre whole milk
1/2 cup sugar
1/3 cup small grain rice
5-7 almonds, blanched
5-7 pistachios
1/4 tsp. cardamom powder
8-10 threads saffron

Method:

  1. Wash rice, soak in plenty of water for 20 minutes.
  2. Drain water, keep rice aside.
  3. Chop almonds and pistas, or crush coarsely,keep aside.
  4. Dissolve saffron by rubbing it in 2 tsp. hot milk keep aside.
  5. Heat half the milk, add rice, stir till it boils.
  6. Reduce heat, allow rice to cook in milk, till almost done.
  7. Add remaining milk, sugar, cardamom, saffron, pistachios, almonds.
  8. Bring back to boil, stirring gently, but continuously.
  9. Reduce heat, simmer for 2-3 minutes.
  10. Serve hot.

Making time: 30 minutes
Makes: 5 servings
Shelflife: Best hot and fresh
Serve chilled, refrigerated also, 1 day
