Creamy Celery Soup
Ingredients:

8 small celery sticks thinly sliced
1 onion finely chopped
3 cups water
1 tbsp. plain flour
2 tbsp. light sour cream
2 tbsp. grated cheese
1 tbsp. chopped fresh coriander
1 tsp. lemon juice

Method:

  1. Boil the celery and onion in 1/2 cup water in a large saucepan till the onion is soft.
  2. Blend flour in 1/4 cup water till smooth.
  3. Stir gradually into the onion mixture.
  4. When smooth stir in remaining water.
  5. Stir constantly till the mixture boils and thickens.
  6. Reduce heat. Simmer covered for 5 minutes.
  7. Stir in sour cream, cheese, parsley and lemon juice.
  8. Serve hot with garlic rolls or croutons or just plain toasts.

Shelf life: Best piping hot
