Starfruit is a regal looking fruit, with great looks and lovely colour. The ripe fruit is used, and is best when plucked while still firm, but a bright healthy yellow. Commercially it is plucked while still a little green, for perishability reasons.
Very nutritious in that it has a fairly high content of potassium, calcium and vit.C, it is also high in fibre content.
The fruit is long about 5”-6” in length, and its cross section resembles a perfect star, with few scattered seeds towards the centre.
The whole fruit has five ridges running its length, and a thin edible skin.
Though the fruit has a very distinct slightly sour sweetness, and an aroma of its own, it is surprising how it lends itself to so many dishes, very pleasantly and easily.
Other than the recipes listed below, it may be added to many recipes as a decorative accompaniment, garnish, or topping.
