Many recipes have already been covered in this section over the years, come each summer. However when it comes to a cool filling dinner or meal, we are at a loss to know what to make, since the heat sort of kills our appetite for the rich, spicy gravies, masalas, fiery biryanis and curries, or even hot steaming soups and stuffed hot veggies.

Try to make the diet more palatable with lighter cooler recipes included in your meals like a cold soup instead of a hot or creamy one, a filling salad or raitha or two instead of a variety of vegetables and gravies. Try variations like tamarind raitha or veggies with a dip or dressing instead of the curdbased raithas everyday.

Rices like lemon rice, chinese fried rice, cool curd rice, tamarind rice, white pulao,spinach rice, etc. would be more apt compared to heavy biryanis, casseroles, baked rices, or spicy curries accompanying steamed rice.

For those who are dieting, a lot of other healthy eats, other than just salads and fruit, can be had from the vast array of recipes. For example pannah instead of the lemon juice, raithas made of skim milk curds, bhakris with curds instead of with rich stuffy vegetables, pithala, etc. can be eaten, with raw chopped onions and oil-less pickles. Jowar, bajra and wholewheat rotis contain much more fibre than breads or maida preparations like naan, parathas, etc.Sweet dishes should be cold and served chilled, not hot rich ones like jalebis, malpuas, gulab jamoons, etc.

Serve instead, chilled chandraharas, rasamalais, sandeshes, or  doodhi or carrot halwas with icecream. Make sure recipes made of milk are properly chilled and kept refrigerated till served.

Make simple hasslefree fresh vegetables which require minimal dry masalas, rather than those which required grinding of fresh masalas, cooking of gravies, etc. Excellent examples are stirfried cabbage, stirfried okra and capsicum, tomato veggie, and many more such recipes found in the simple and hasslefree vegetables section.

Filling chillers like falooda, thandai, jellies, icecreams, puddings, fruit combis, etc. may be enjoyed instead of a full dinner. Accompany them with a light dish like toasts with slices of chilled mango in between instead of jams, butter, etc.
