Sweet Corn Dishes
Sweet Corn Waffles 
Ingredients

Sweet corn
Green chillies
Mint leaves
Coriander leaves
Bread
Plain Flour
Salt
Oil
Baking soda

Method

  1. Drain 1/2 can corn, saving the liquid in a vessel.
  2. Transfer drained corn to an electric mixer.
  3. Add 2 green chillies, 1 sprig mint leaves, 1 tsp. coriander leaves.
  4. Crush well, add very little saved liquid, only if required.
  5. Add to remaining saved corn liquid.
  6. Run 1 slice of bread in mixie, to make crumbs.
  7. Add to corn mixture.
  8. Add 1 cup plain flour, salt, 1 tbsp. oil, 1/2 tsp. baking soda.
  9. Mix well till no lumps of flour remain.
  10. Heat a greased waffle iron, do not overheat.
  11. Pour a ladleful of mixture in centre, depending on size of iron.
  12. Close and allow to become crisp and golden on both sides.
  13. Serve hot with chutneys or ketchup or even honey.
