Courtyard by Marriott Chennai is back with it's famous Cook N Dine sessions with Chef Jacob. Re-launched after a year, this two-hour session is conducted on 2nd Wednesday every month and has a different and unique theme for every session.
Theme for June: Chocolate making and Garnishing
Taking the participants on an unforgetable culinary experience Chef Jacob Justin, Head Chef at Courtyard by Marriott, demonstrated the process of chocolate fillings and garnishing.

Don't we all want to learn the art of chocolate making? And what's better than learning it from an expert pastry chef himself.
The session started with an introduction of chocolate and Chef Jacob explaining how important it is to temper the chocolate.
Tip: Chocolate tempering increases the quality and taste of the chocolate and hence it is a step that should not be missed.
Chocolate in itself is heavenly and when molded artistically to garnish they become an art. These are made to be used to decorate gateaux, pastries or any desserts.
Among a plethora of chocolate garnishings, Chef Jacob demonstrated chocolate curls, petals, cigars and square rolls.
Next in the line were the Belgian Chocolate Truffles
These hand rolled chocolates come with a filling of butter and liquid glucose. This yummy truffles are diped and re-dipped in melted chocolate and hand rolled. And to top it all it is dusted with cocoa powder.

And to top all these delicacies, Chef Jacob starts demonstrating the next chocolate - Sesame Sandwich. This beauty is filled with cream, hazelnut paste and milk chocolate. Then, the filling is pipped between two chocolate discs that are filled with sesame seeds.
And if that was not enough, this whole sandwich is then dipped in hot melting chocolate. If this hasn't got you tempted, nothing will!
So, without wasting any more time go ahead and make this luxurious sesame sandwich.
