Arborio rice is a variety of short-grained rice used primarily in the classical preparation of risotto. This is an Italian short grain rice. The cooked rounded grains are firm creamy and chewy due to its high amylopectin starch content. Arborio rice is prepared al dente. The starch content is very high.
