It is a native to south America and is extracted from the tubers of underground creeping rhizome. It is starch rich and used in powder form

Commonly used in:
It is used in biscuits, puddings, jellies, cakes, hot sauces, soups, ice creams. It is used as a thickener and stabilizing agent in some asian cuisines as well

It is a good source of folates and B-complex vitamins.  It has moderate levels of copper, iron, manganese, phosphorous, magnesium, and zinc
