Cucumber

Description:
Like the tomato, the cucumber is a fruit but is treated as a vegetable. A creeping vine, its cylindrical fruits contains 90 per cent water. While China is now the main producer of cucumbers, it originated in Nepal. Cucumbers come in white, yellow and orange colours. While some varieties are eaten raw, others are used in cooking.
Commonly used in:
Pickles, salads and in some curries.
Health Benefits:
The phytonutrients found in cucumbers provide antioxidant, anti-inflammatory, and anti-cancer benefits. They are also a good source of vitamin C.
