Luscious Apple Pie

Ingredients

Pastry (recipe given below)
1 tablespoon flour
1 tablespoon sugar
31/2 cups diced apples
1/2 cup sugar
1/4 teaspoon nutmeg
5 tablespoons cream
1 cup shredded Cheddar cheese (use old chesse)

Method:

  1. Line a 9-inch pie pan with pastry and sprinkle the bottom with the flour and sugar mixed together.
  2. Toss together the diced apples, sugar, and nutmeg, and place in the pastry-lined pan.
  3. Pour the cream over them, cover with a lattice pastry top
  4. Bake in a hot over at 425o F., for 30 to 35 minutes, or until well done and lightly browned.
  5. Remove from the oven and sprinkle with the shredded cheese.

For the Pastry (Single 9-inch Crust)

Ingredients

11/2 cups sifted flour
1/2 teaspoon salt
3 tablespoons water
1/2 cup butter/ghee

Method:

  1. Sift the flour and salt together.
  2. Add the water to 1/4 cup of the flour mixture to make a smooth paste.
  3. Add the butter into the remaining flour mixture, using a pastry blender
  4. Add the paste to this mixture and blend lightly with a fork until the dough holds together.
  5. Roll the dough on a lightly floured board and fit into a 9-inch pie pan.
  6. Press the edge of the pie with a fork.
Makes one 9-inch pie
