East Indian Dishes
Bottle Masala

Ingredients

2-1/2 kgs. red chillies
1/4 kg. til (seasame seeds)
1/4 kg. wheat
1/4 kg. turmeric
3/4 kg. Coriander seeds
1/4 kg. raw gram
1/4 kg. khus-khus
10 gms. naikaiser 10 gms. Kababchuni (all spice)
10 gms. Cardamoms
50 gms. cinnamon
10 gms. tirphal
10 gms. maipatri
125 gms. pepper
8 gms. Cloves
10 gms. bardian (anise-star)
10 gms. shahjeera
1/4 kg. mustard seed
10 gms. zaipatri
125 gms. jeera

Method:

  1. Clean the ingredients and dry them in the sun.
  2. Roast all the ingredients on slow fire.
  3. Mix the chillies in the mixture and then the other ingredients.
  4. Mix all the powders
  5. Fill in dry empty bottles
Note: Can avoid any of the ingredients if not available.
