Rain Feasts
Chicken Soup
From Alka Mahatho

Ingredients

1 tbsp oil
1 onion, chopped finely
2 carrots, sliced
3 stalks celery, cut in to small size
Salt as per taste
Pepper as per taste
5 cups chicken stock
2 boneless chicken breast halves

Method

  1. Heat oil
  2. Fry onion till transparent
  3. Add chicken stock, bring to boil
  4. Add carrots, celery chicken breast and salt
  5. Let it cook till vegetables and chicken are tender (approx 10 minutes)
  6. Remove from fire
  7. Remove chicken breast, let it cool
  8. Cut into bit-sized pieces
  9. Add back to stock
  10. Bring back to boil, adding pepper
  11. Serve hot
