Thai Dishes
Shrimp Fried Rice

Ingredients

Serves 2-4

250 gm. fresh shrimp
2 cups cooked steamed rice
1 cup cauliflower, sliced
1 cup cabbage, sliced
1 cup straw mushrooms
2 tomatoes, sliced
1-2 eggs
1/2 onion, sliced
1 tbsp. ginger, sliced
1 tbsp. garlic, chopped
3 tbsp. cooking oil
1 tbsp. fish sauce or salt to taste
1 tbsp. light soy sauce
sugar to taste
1 tbsp. long chilli, sliced and seeded
2 tbsp. spring onions, chopped
2 tbsp. fresh coriander

Method

  1. In a wok, fry garlic in oil.
  2. Add the egg(s), shrimp,rice, onion,  cauliflower, cabbage and mushrooms while stirring.
  3. Add tomato, ginger, fish sauce or salt, soy sauce, sugar, chilli,  spring onions and coriander.
  4. Serve on a plate.

serves 2-4.  Chicken, Pork or Seafood may be substituted for the shrimp.
