How to Make Aaloo-Baingan Mash

  • Cut the green chillies and onion into small pieces.
  • Boil the potatoes and aubergine (baingan) with the skins on. Once boiled and cooled, remove the skins.
  • Mash them together, adding the butter in.
  • Add all the other ingredients. Mix well with the mash.
  • Serve it as a side dish, or make it a sandwich filler.
