Ingredients

  • 1/4 kg - potato
  • 100 gms - potato flakes
  • 1/4 kg - oil
  • 1/4 kg - gram flour
  • 1 bunch - coriander leaves
  • 1 bunch - mint leaves
  • 1 bunch - curry leaves
  • 4 - green chillies
  • 1 - citron (fresh) or 2 tbsp - juice
  • 25 gms - black gram
  • 1 tsp - mustard seeds
  • 1 tsp - cumin seeds
  • 1 tsp - coriander powder
  • 1/4 tsp - turmeric powder
  • 1/4 tsp - ginger powder
  • 1/4 tsp - garlic powder
  • 2 tsp - salt for taste
  • 1/4 tsp - baking soda

How to Make Aalu Bonda AP style

  • Wash potato properly and then boil them.
  • Peel and mash cooked potatoes and keep aside.
  • Wash and chop all leaves.
  • Add 4-5 spoons of oil in a pan and heat.
  • Add black gram, cumin, mustard seeds and fry for 2 minutes (till it appears golden in colour)
  • Add chopped leaves and fry. Then add mashed potato and all other ingredients - turmeric, ginger, garlic, chilli and table salt. Mix properly.
  • Finally add citron juice and properly mix.
  • Make round small balls of the mixture.
  • Take gram flour in a bowl and add salt and baking powder.
  • Mix properly with 100 ml water to make a paste.
  • Take a deep pan, add 1/4 kg oil and heat.
  • Take mashed potato balls and dip properly in the gram flour paste.
  • Then fry properly till it turns golden in colour.
