Ingredients

  • Mixed vegetables - 1/2 kg (yam, curry plantain, yellow pumpkin)
  • Coconut - 1/2, grated
  • Red Chillies - 3 to 4
  • Kokum - 1 small piece
  • Oil (coconut) - 1 tbsp
  • Mustard- 1 tsp
  • Cumin - 1 tsp
  • Curry leaves - a few
  • Coconut oil - 1 tsp
  • Salt to taste.
  • How to Make Alchikeri:

    1. Dice the vegetables. Boil them with salt and water.
    2. Keep aside 2 tbsp of grated coconut and grind the rest with red chillies.
    3. Add the ground coconut-chilli paste to the vegetables. Add kokum too and let it simmer for 3 mins.
    4. Prepare seasoning with oil, mustard and curry leaves. Add to the vegetable mixture.
    5. Roast the 2 tbsp of grated coconut that was set aside in 1 tsp oil and add it too.
    6. Mix well and serve.
